本課程深入探究常見的質性研究方法，課程主題分為三個部分。第一部分介紹常見的質性資料收集，包括民族誌、參與觀察、深度訪談。第二部分介紹新興的線上質性研究方法，將田野和訪談技巧用在數位場域。第三部分討論幾種質性研究設計和分析方法，包含紮根理論、論述和敘事分析、個案延伸法、歷史比較法。課程除了講授、文本教材的提問外，還包括田野調查實作。This course explores common quality research methods in depth, and the course theme is divided into three parts. The first part introduces common quality data collection, including ethnic journals, participation and observation, and in-depth interviews. The second part introduces new online quality research methods, using fields and visiting skills in digital fields. The third part discusses several quality research design and analysis methods, including root theory, argumentation and event analysis, case extension method, and historical comparison method. In addition to teaching and textual textbooks, the course also includes field survey work.
質化研究是一門社會科學領域常用的研究方法論課程，本課程介紹餐旅領域常使用之質化研究方法的觀點與研究過程，以文本分析研究為主認識質化研究特質，詮釋典範的相關觀點、量化與質化研究差異、質性研究企劃過程、資料收集方法及技巧、研究倫理、寫作方式等；並協助同學選擇碩士論文主題、找出問題意識、整理文獻、擬出研究架構，撰寫研究大綱、並執行質化研究過程。
