教育目標 Course Target

使學生明瞭食品分析原理及培養檢驗分析的能力;包含實驗室安全教育、食品分析實驗使用之器具、一般食品成分分析項目如水分、灰分、粗蛋白及粗脂肪之測定,且進行特殊成分如脂肪酸、亞硝酸鹽、酸性色素和果汁中醣類成分分析等之實驗操作,使學生與基礎食品分析正課課程互相配合,對課程具有相輔相成的效果。To enable students to understand the principles of food analysis and develop the ability to inspect and analyze; including laboratory safety education, equipment used in food analysis experiments, determination of general food component analysis items such as moisture, ash, crude protein and crude fat, and the measurement of special components such as fatty acids , nitrite, acid pigments, and experimental operations on the analysis of sugar components in fruit juice, etc., allowing students to cooperate with the basic food analysis course, and have a complementary effect on the course.
