昆蟲不僅可作為食物，亦是世界上許多民族的主要食物成分之ㄧ。目前已知的昆蟲種類超過數千種，且散布於世界各地，本課程將針對昆蟲作為食物與飼料原料之潛力、機會、應注意事項與挑戰，最終學習目標乃是希望能夠讓學生了解昆蟲作為食物與飼料原料之潛力，引發學生對於新型態飼料原料的興趣，未來能夠在這個領域繼續深入研究。

Insects are not only used as food, but are also one of the main food ingredients for many peoples in the world. There are currently more than thousands of known insect species and they are scattered all over the world. This course will focus on the potential, opportunities, precautions and challenges of insects as food and feed ingredients. The ultimate learning goal is to enable students to understand the potential of insects as food and feed ingredients, arouse students' interest in new types of feed ingredients, and continue to conduct in-depth research in this field in the future.
