本課程主要針對銀髮族之餐飲相關議題探討，其中針對之對象除健康老人之外也包含有疾病之老人。本課程將涵蓋銀髮族之生理和心理狀態之介紹，及其在飲食方面將面臨之挑戰，現今政府所提供社區據點之餐飲服務。本課程預計透過不同主題課堂講授介紹、相關議題討論與分組討論方式傳授教導學生，並將邀請相關領域專家對學生進行演講。接下來介紹銀髮族疾病飲食，同時搭配實作，像是吞嚥訓練、營養評估和營養教案設計，並將服務學習融入此課程，將學生帶入銀髮族社區據點，學生和老人實際相處後將可了解老人所遭遇之困難。對學生來說，此課程將幫助其了解自身周圍銀髮族群在飲食上之需求，並滿足其所需。
This course mainly discusses the related issues of the meals and drinks of silver hair people, and the targets include the elderly with illnesses in addition to healthy elderly people. This course will cover the introduction of the physiological and psychological state of the hairdressers and the challenges they will face in terms of diet, and today the government provides community ordering services. This course plans to teach students through lecture introductions, related topic discussions and sub-group discussions, and experts from relevant fields will be invited to give lectures to students. Next, we introduce diet for hair disease, and at the same time, we combine practices such as swallowing training, nutrition evaluation and nutrition lesson plan design, and integrate service learning into this course, bring students into the hair community point, and students and the elderly will be able to get involved in actual interaction. Understand the difficulties the elderly face. For students, this course will help them understand the dietary needs of their hairdressers around them and meet their needs.
