教育目標 Course Target

1.提高修課學生對銀髮產業的認識,並增加學生對老人餐飲相關議題之興趣 2.結合社群團體,培養學生具備推廣並執行老人健康飲食促進方案 3.培養學生具備老人營養評估之能力 4.培養學生製備老人膳食之能力1. Improve students’ understanding of the elderly industry and increase students’ interest in issues related to catering for the elderly. 2. Combine with community groups to train students to promote and implement healthy diet promotion programs for the elderly 3. Cultivate students with the ability to assess nutrition for the elderly 4. 課程概述 Course Description

本課程主要針對銀髮族之餐飲相關議題探討,其中針對之對象除健康老人之外也包含有疾病之老人。本課程將涵蓋銀髮族之生理和心理狀態之介紹,及其在飲食方面將面臨之挑戰,現今政府所提供社區據點之餐飲服務。本課程預計透過不同主題課堂講授介紹、相關議題討論與分組討論方式傳授教導學生,並將邀請相關領域專家對學生進行演講。接下來介紹銀髮族疾病飲食,同時搭配實作,像是吞嚥訓練、營養評估和營養教案設計,並將服務學習融入此課程,將學生帶入銀髮族社區據點,學生和老人實際相處後將可了解老人所遭遇之困難。對學生來說,此課程將幫助其了解自身周圍銀髮族群在飲食上之需求,並滿足其所需。
This course mainly discusses catering-related issues for seniors. In addition to healthy elderly people, it also targets elderly people with diseases. This course will cover an introduction to the physical and psychological state of the elderly, as well as the challenges they will face in terms of diet, and the catering services in community bases provided by the current government. This course is expected to teach students through classroom lectures on different topics, discussions on related topics, and group discussions. Experts in related fields will be invited to give lectures to students. Next, we will introduce the diet of the elderly with diseases, and also combine it with practical practices, such as swallowing training, nutritional assessment and nutrition lesson plan design. Service learning will be integrated into this course, bringing students into the community base of the elderly. Students and the elderly will be able to interact with each other after actually getting along. Understand the difficulties experienced by the elderly. For students, this course will help them understand the dietary needs of the elderly people around them and meet their needs.
