教育目標 Course Target

Familiarize students with the major studies in the area of hospitality management. Topics include: Management, Human resource, customer relations, Financial Management, Market segmentation, Major statistic analysis, Current trend. Course participants will learn how to interpretate a research paper and further solve problems through various research methods. Major trends in the industry will also be introduced in class in order to build the bridge between academy and industry.

課程概述 Course Description

本課程主要讓學生了解目前餐旅方面研究的各大區塊,包含營運管理,人資,顧客關係,財務管理,市場區隔及產業趨勢,課程以文獻討論的方式進行。在文獻探討的過程當中不僅會介紹目前餐旅管理研究主要用的質性及量化分析方法,包含焦點訪談,內容分析,變異數分析,因素分析,迴歸分析及較進階的結構方程式..等等在餐旅相關領域的研究應用;同時也會讓學生熟悉學術寫作的模式及組織方法。參與課程的學生將可以學習如何解讀一篇學術文章,並由其研究結果中尋找自己將來可能研究的方向。另一方也會藉由深入的文獻整合報告寫作練習及課堂中的討論,建立基礎的理論概念。學生多面性的文獻閱讀及分析,將協助其在研究主題上有全面綜觀的概念,使將來研究與整體產業結合,協助其將來研究結果更具實用性。學生將在課程中學到解讀文獻的技巧、比較分析及進一步文獻整合的能力。

This course mainly allows students to understand the major areas of current research on catering and tourism, including operation management, personnel, customer relationships, financial management, market partitions and industry trends. The course is conducted in a cultural discussion manner. In the process of literary exploration, not only will the quality and quantitative analysis methods used in the current catering and tourism management research are introduced, including focus interviews, content analysis, variation analysis, factor analysis, replication analysis and more advanced structural equations, etc., and other research applications in related fields of catering and tourism; at the same time, students will be familiar with the model and organizational methods of academic writing. Students participating in the course will be able to learn how to interpret an academic article and find the directions they will be able to research from their research results. The other party will also establish a basic theoretical concept through in-depth literature integrating report writing practices and discussions in class. Students' multi-faceted reading and analysis will help them have a comprehensive and comprehensive concept in the research topic, making the research combined with the overall industry, and helping them to make the research results more practical. Students will learn the skills of interpreting essays, comparative analysis and further essay integration in the course.
