教育目標 Course Target

在本科目的教學訓練之下,修習學生應能習得最先進的食品生產過程之安全保障技術,理解在CODEX組織(中文譯為食品法典委員會)的倡議下所推動的「風險溝通」、「風險分析」、「風險管理」之意義,藉以強化學習者對於食品危害事件的危機管理能力,確保學生在面對國際競爭中的專業技能。Under the teaching training of this course, students should be able to acquire the most advanced safety assurance technology in the food production process and understand the "risk communication" and "risk analysis" promoted under the initiative of the CODEX organization (Chinese translation as the Codex Alimentarius Commission) ", the meaning of "risk management" is to strengthen learners' crisis management capabilities for food hazard incidents and ensure students' professional skills in facing international competition.


課程概述 Course Description

本科目授課教師於2003年開始即接受農業委員會委託規劃中長期的安全農業實施計畫與策略,並協助施行輔導農產品產銷履歷計畫。為促使本項國家型專題計畫研究可以轉化為教學科目,並提供修習學生學習最先進的食品安全履歷建置技術,特別於2008年9月起開設本科目,希望藉此培育學習者了解農產品生產與食品加工過程中,如何進行生產履歷記錄以及建構出國際化的追溯體系。
Teachers teaching this subject have been commissioned by the Agriculture Committee in 2003 to plan medium- and long-term safe agriculture implementation plans and strategies, and assist in the implementation of the program to guide the production and marketing of agricultural products. In order to convert this national special project research into a teaching subject and provide students with the most advanced food safety resume building technology, this subject was launched in September 2008, hoping to cultivate learners' understanding of agricultural products. During production and food processing, how to record production history and build an international traceability system.

等著作、講義為主要參考,為修習者解說食品安全追溯體系的基礎理論與建構技術的實務。
Since there is currently no similar teaching material in Taiwan, we will use it
1. Executive Yuan Committee on Agriculture’s past promotion or training materials for agricultural product production and marketing related projects
(Textbook jointly compiled by Dr. Wang Liangyuan, Department of Food Science, Tunghai University, Dr. Xu Fu, Department of Horticulture, National Taiwan University, and others)
2. "Traceability System derived from on-site improvement" (written by Yu Takayama, Nippon Kogyo Publishing Co., Ltd.)
3. "ISO:22000 Food Safety Management System" (Published by Japan Standards Association)
4. "Introduction to HACCP in the Food Industry (New Edition)" (Compiled and published by Nippon Food News Service)
Other works and lectures are used as the main reference to explain the basic theory and construction technology of the food safety traceability system to practitioners.
