教育目標 Course Target

在本科目的教學訓練之下,修習學生應能習得最先進的食品生產過程之安全保障技術,理解在CODEX組織(中文譯為食品法典委員會)的倡議下所推動的「風險溝通」、「風險分析」、「風險管理」之意義,藉以強化學習者對於食品危害事件的危機管理能力,確保學生在面對國際競爭中的專業技能。Under the teaching of the subject, students should be able to obtain the most advanced safety guarantee technology in the food production process, and understand the meanings of "risk communication", "risk analysis", and "risk management" promoted under the initiative of the CODEX organization (translated as Codex Alimentarius Commission in Chinese), so as to enhance the crisis management ability of learners for food hazard incidents and ensure students' professional skills in facing international competition.


課程概述 Course Description

本科目授課教師於2003年開始即接受農業委員會委託規劃中長期的安全農業實施計畫與策略,並協助施行輔導農產品產銷履歷計畫。為促使本項國家型專題計畫研究可以轉化為教學科目,並提供修習學生學習最先進的食品安全履歷建置技術,特別於2008年9月起開設本科目,希望藉此培育學習者了解農產品生產與食品加工過程中,如何進行生產履歷記錄以及建構出國際化的追溯體系。
The course teachers of this subject have accepted the long-term safe agricultural implementation plan and strategies since the Agricultural Committee started in 2003, and assisted in the implementation of the production and performance plan for agricultural product sales. In order to promote the national-type planning research to be transformed into teaching subjects and provide students with the most advanced food safety planning construction technology to learn, especially since September 2008, we hope to cultivate learners to understand how to record production and practice production and tracking systems in agricultural product production and food processing.

3.「ISO:22000食品安全管理系統」(財團法人 日本規格協會編印)
4. 「食品業界HACCP入門(新訂版)」(日本食糧新聞社 編印出版)
等著作、講義為主要參考,為修習者解說食品安全追溯體系的基礎理論與建構技術的實務。
Since there are no similar textbooks in Taiwan, they will be used
1. Executive Yuan Agricultural Committee Promotion or training textbooks for the year of relevant plans for agricultural product sales
(Taiwan University, Department of Food Science, Donghai University, Dr. Wang Liangyuan, Department of Garden Art, Taiwan University, Dr. Xu Fu and others jointly edited the seal textbook)
2. "Traceability System derived from the current improvement" (by Takayama Yuki, Japan Industrial Publishing Co., Ltd.)
3. "ISO:22000 Food Safety Management System" (printed by the Japan Standards Association by the Financial Group)
4. "HACCP entry in the food industry (new edition)" (printed and published by Japanese Food News)
The main reference is the main reference, and it explains the basic theories and construction techniques of the food safety traceability system for practitioners.
