教育目標 Course Target
本課程以「全齡營養」與「食品安全」為主軸,探討數位科技在健康促進、飲食管理與食品品質監控上的應用。課程內容涵蓋嬰幼兒、兒童、成人到高齡者等不同年齡層的營養需求與健康挑戰,使學生了解不同生命階段在飲食設計與營養補充上的差異,並建立全齡營養的基本概念。除營養議題外,課程亦介紹食品安全的重要基礎知識,包括食品衛生、風險因子、品質管理、國際標準及食品供應鏈中的安全控管,幫助學生認識食品從生產、加工到消費各環節所涉及的安全問題。
在數位科技應用方面,課程將介紹物聯網(IoT)、大數據與人工智慧(AI)等技術在營養與食品安全領域中的實際應用,例如數位化飲食紀錄、營養素分析、個人化營養建議、食品檢測、智慧感測、品質控制與食品追溯系統等。透過課程講授與案例說明,讓學生了解科技如何協助提升營養評估的效率與精準度,並強化食品安全管理與風險預警能力。
此外,課程也重視跨域整合與實務應用,透過智慧營養、食品安全管理及產業案例分享,引導學生從科技、健康與產業三個面向進行思考,理解數位科技在未來健康照護、食品產業升級與永續發展中的重要角色。期望修課學生能建立基礎知識與跨領域視野,作為未來進一步投入相關研究、實務應用或產業發展之基礎。
This course focuses on "nutrition for all ages" and "food safety" and explores the application of digital technology in health promotion, diet management and food quality control. The course content covers the nutritional needs and health challenges of different age groups, including infants, children, adults and the elderly. It enables students to understand the differences in diet design and nutritional supplements at different life stages and establish the basic concepts of nutrition for all ages. In addition to nutrition topics, the course also introduces important basic knowledge of food safety, including food hygiene, risk factors, quality management, international standards and safety control in the food supply chain, helping students understand the safety issues involved in every link of food from production, processing to consumption.
In terms of digital technology applications, the course will introduce the practical applications of technologies such as the Internet of Things (IoT), big data and artificial intelligence (AI) in the fields of nutrition and food safety, such as digital diet records, nutrient analysis, personalized nutrition advice, food testing, smart sensing, quality control and food traceability systems, etc. Through course lectures and case illustrations, students can understand how technology can help improve the efficiency and accuracy of nutritional assessment, and strengthen food safety management and risk warning capabilities.
In addition, the course also attaches great importance to cross-domain integration and practical application. Through the sharing of smart nutrition, food safety management and industry cases, students are guided to think from the three aspects of technology, health and industry, and understand the important role of digital technology in future health care, food industry upgrading and sustainable development. It is expected that students taking this course can establish basic knowledge and cross-field perspectives as a basis for further investment in related research, practical applications or industrial development in the future.
