6857 - 餐飲文學與美學 Literature and Aesthetics of Food and Beverage


教育目標 Course Target

課程先介紹美學基礎概念,第二部分再透過賞析、評論現有的著作,引導學生探索飲食著作,並進而能臨摹、誘引出同學對美食文創的熱忱。在第三部分,先閱讀三篇論文,徹底擺脫一般人對創業者的基本認知---假定創業的目的是追求利潤的需求行為。導入餐飲創業的生活美學的生活現象學取向下的創業研究,提供學生新的餐飲生活視界。The course first introduces the basic concepts of aesthetics. The second part then analyzes and reviews existing works to guide students to explore diet works, and thus can imitate and inspire classmates to create food. In the third part, read three articles first to completely eliminate the basic perception of entrepreneurs of ordinary people--assuming the purpose of entrepreneurs is to pursue profit-oriented behavior. Introducing the entrepreneurial research under the orientation of life phenomenon of the catering industry, it provides students with a new catering life vision.
