隨著國際化的趨勢，台灣的美食遠近馳名，吸引許多外國人前來品嘗美食，但是食品安全一再出現問題，造成社會恐安並影響國人身體健康，又高科技發展環境災害導致人體健康受到影響時所衍生的糾紛，為了釐清一些科技發展產業所製造的有害污染物對人體健康的影響，針對健康影響相關法律與政策與食品安全和醫療問題層出不窮，本課程目標係，將食品衛生安全及醫療與伴隨科技發展環境災害導致人體健康受到影響時所衍生的糾紛處理方式，及進入程序後的舉證責任，分別由法律及醫學.食安.環境問題之觀點，闡釋法學與醫學跨領域整合之重要性，建立環境法學與醫學間之跨領域的對話機制。且透過法律與醫學的科際整合，促成跨專業間相互理解的可能性，培養學生面對複雜的多面向議題時，能夠從多元的角度了解醫事法律，培養具備跨領域專業素養能解決問題的人才。台灣在刑事法的學習上多處於理論的爭議與研究，但是隨著科技發展也導致現代人們生存的議題，在一般刑法議題已經無法全然解決新科技所帶來的風險，國家為了對於科技所帶來風險，反而是透過制定特別刑法方式去解決這些風險。不過，刑法的規範範圍甚廣，本課程的目標主要以食品犯罪的議題為出發，透過閱讀文章以及討論議題方式，藉此啟發同學能夠以多元的角度看待刑法。With the trend of internationalization, Taiwan's food is well -known and well -known, attracting many foreigners to come to taste food, but there are repeated problems in food safety, causing social fear of the health and affecting the health of the country.
