本課程之特色是以小班教學之方式,配合不同領域之教師所形成之共學社群,藉由提昇學生治國平天下品格層次之素養,來培養學生在人文及文明素養的廣度、深度及行動力。本課程之設計理念,使學生了解過去東方發生了什麼重大的文明演進事件,過去西方發生了什麼重大的事件,以至於造成今天的世界現況以及值得關心的普世議題。在了解世界目前的多元問題及來龍去脈後,使學生了解自己對當今世界的責任及可能之因應之道為何,因而得以貢獻自己的心力,並使求學有了清楚的動機及方向。本課程將著重在下列四個單元:
課程單元(一): 東西此相逢 當神農遇見咖啡
喝一杯咖啡也許是追求著浪漫的映像,或是迷戀著氤氲的氣韻,也可能是纏綿於醇厚之中滿足了嗅覺、味蕾與想像。然而在18世紀歐洲咖啡館開始擴展時,咖啡與咖啡館正是為政治思想,文學,媒體,學術,社交,商業甚至是革命等等近代西方文明思潮,提供了催生平台與開展的契機。本課程分兩面向,其一延續上學期以古傳醫茶道方式,開發品味感知能力為主軸,由靜心品飲咖啡開始,練習內觀返視,體證飲品在自身的作用,避免意識陷阱,真切體會咖啡品質,覺知咖啡製程與生產態度上的差異,自然能瞭解市面咖啡與飲品的優劣良窳。其二,由咖啡的歷史發展,認識近代西方文明的開展傳播與當代咖啡品質在工業化,商業化與理想化的不同思潮。最終以茶道與中醫本草的角度,重新開發制定咖啡製程,讓咖啡不只是一般的飲料,為身心生理與心靈的滿足,進入養生咖啡道的境界。
課程單元(二): 西方文明照映下的東方生活與視野:工作倫理
在認識了西方文明的猶太教傳統,與學主義和資本主義之時代精神後,持續讓學生從自己東方處境的生活與視野,進入西方文明照映下一個切身的課題:工作倫理。將要認識從古希臘、中世紀、文藝復興、宗教改革、馬克思、佛洛依德、資本主義、...脈絡下,現代人的工作觀。理解在西方文明傳統中,工作的觀念又如何在其中演變,並建構出對於「成為人」的意義追求,進而反思面對佔據生命2/3的「工作」,在當代社會脈絡下自身要如何詮釋與實踐。
課程單元(三): 西方飲食文化
本課程將延續上學期飲食文化中對『食』文化的覺醒,已完成對自己家中飲食文化的傳承,再擴及至周遭過去、先在和未來的台灣菜。下學期將再針對西方的飲食,其中較具代表性的義大利、法國、美國飲食做介紹。本次課程期許學生能對飲食在西方文明當中所扮演的角色有更進一步的認識。同時,當在品嘗各國不同食物時,能以更開闊的心接受不同國家的食物及對其所代表文化的尊重。
課程單元(四): 認識現代資本主義及對人類社會的影響
一、什麼是現代資本主義?
(一)一種生產模式:線性、效率、經驗、個人主義、競爭、可計算、可切割與複製、進步、成為公領域的生活態度。非線性、情感、退步、整體性退居私領域。
(二)現代資本主義與前資本主義的差別
1. 封建社會:集體的權利,西方中世紀的莊園經濟與行會組織。
2. 前資本主義:自私的貪婪,荷蘭船長的故事。
3. 現代資本主義的初衷:賺錢是上帝賦予的能力,努力賺錢榮耀上帝。
4. 笛卡兒:我思故我在,我懷疑所以我存在,但是賜與我懷疑的力量,不能懷疑。不能懷疑上帝。
(三)私領域的反動,保留了非理性的情感,透過文學、藝術、音樂,乃至建築、攝影、電影…等等,共同造反。公領域與私領域相互鬥爭與穿透。
(四)資本主義的物質成就:科技、私有財產權、醫療、消費文化、工作。
(五)資本主義如何興起?引發何種問題?任意切割、任意計算、任意複製,成為空無者,私人利益是一切的判准。人類心靈前所未有的空虛。

The characteristic of this course is to cultivate students' broadness, depth and action in humanistic and civilized cultivation by enhancing students' quality level of governance and world-wide cultivation by enhancing students' ability to cultivate students' broadness, depth and action in humanities and civilization cultivation. The design philosophy of this course allows students to understand what major civilization evolution happened in the East in the past, what major events happened in the West in the past, and what has led to today's world situation and universal issues worthy of attention. After understanding the diverse problems in the world and coming to the dragon to go, students can understand their responsibilities and possible causes for the current world, so they can pay their own efforts and give them a clear way and direction to learn. This course will focus on the following four units:
Course unit (1): Things meet this time when the gods meet coffee
Drinking a cup of coffee may be pursuing romantic images, or obsessed with misty atmosphere, or it may be that it is scented, taste buds and imagination that satisfy the smell, taste buds and imagination in the mellow. However, when the 18th Century European coffee shop began to expand, coffee and coffee shop provided a platform and an opportunity to create modern Western civilization trends such as political thought, literature, media, academics, social, business and even revolution. This course is divided into two aspects. One of the courses is extended to the previous school period, with the method of ancient medical tea ceremony, and the main focus is on developing taste perception. It starts with calming taste and perception, practices internal viewing and recognizing the role of beverages in itself, avoids consciousness traps, and truly understands the quality of coffee. Knowing the differences in coffee production and production conditions, we can naturally understand the advantages and disadvantages of coffee and beverages on the market. Second, from the historical development of coffee, we understand the development and spread of modern Western civilization and the different trends of contemporary coffee quality in industrialization, commercialization and idealization. Finally, from the perspective of tea ceremony and Chinese medicine, we redevelop the coffee process, so that coffee is not just a general drink, but also enters the state of nourishing coffee path for the satisfaction of body, mind, physiology and mind.
Course Unit (II): Oriental Life and Vision under the Illuminated by Western Civilization: Work Ethics
After understanding the tradition of Western civilization, the spirit of the times of learning and capitalism, students continue to enter the next personal topic of Western civilization from their own oriental life and vision: work ethics. We will understand the work of modern people from ancient Greek, medieval, literary rejuvenation, religious reform, Marx, Freud, capitalism,... Understand how the concept of work evolves in the Western civilization tradition, and construct the meaning of "becoming a human being", and then reflect on how to talk and practice it under the influence of contemporary society.
Course unit (III): Western food culture
This course will continue to awaken the "food" culture in the food culture during the last year, and have completed the inheritance of the food culture in my home, and then expanded to the past, first and future Taiwanese cuisine around me. In the next period, we will introduce Western diets, including the more representative Italian, French and American diets. During this course, students can have a further understanding of the role of diet in Western civilization. At the same time, when tasting different foods from different countries, we can accept food from different countries with a more open heart and respect for the culture they represent.
Course unit (IV): Understanding modern capitalism and its impact on human society
1. What is the modern capitalism?
(I) A production model: linearity, efficiency, experience, personalism, competition, calculation, cut and copying, progress, and lifestyle in the public domain. Nonline, emotional, regressive, and overall retreat into private territory.
(II) The difference between modern capitalism and previous capitalism
1. Feudal society: collective rights, the garden economy and ecclesiastical organization of the West.
2. Previous capitalism: selfish greed, the story of the Dutch captain.
3. The original intention of modern capitalism: making money is God’s ability to pay, and strive to make money and honor God.
4. Descartes: I think, so I am here, I doubt that I exist, but the power of ignorance and my doubt cannot be doubted. You cannot doubt God.
(III) The reaction in the private domain retains irrational emotions and rebels together through literature, art, music, and even architecture, photography, movies, etc. The public and private domains fight and penetrate each other.
(IV) Material achievements of capitalism: technology, private property rights, medicine, consumer culture, and work.
(V) How does the capitalist theory come to light? What kind of problems will it cause? If you cut, calculate, or copy it at will, and become empty, your personal interests are the judgment of everything. The human mind is unprecedentedly empty.
