從2014威尼斯建築雙年展開始,東海大學建築系所與米蘭理工大學建築與都市規劃建設學院在每年夏天合作舉行針對食物地景作為文化上的理解認識,也藉由理解彼此的食文化,回看自身對於土地的認識與思考更多建築設計發展上的可能,我們稱之為“東方與西方的對談集”(East/West Dialogue)。

在此次【2017義大利食物地景工作營:酒莊設計】,我們更聚焦於討論某種食物本身映射出的土地價值,並選擇了台灣人或許有點熟悉但不又太熟的“葡萄酒”作為研究對象,在工作營開始的前六天,直接在人口最稠密的義大利北方最大城-米蘭,做葡萄酒生活與消費習慣的探討研究,參與工作營學習的成員會先分組之後,需要盡可能搜集消費行為樣本以及酒單與酒區風土在城市當中的呈現狀態,透過不同的媒材照片/圖面/影像剪輯作整合成為研究報告,並且我們會在米蘭參觀研究中的期間我們也同時安排參觀兩三個當代的米蘭展覽館:由Rem Koolhaas設計從老酒廠空間所改建及新建的Prada基金會/位於米蘭偏北市郊由工廠廠房改建的Hangar Bicocca私人美術館/米蘭三年展博物館,建築師Giovanni Muzio在1933年為當時的米蘭三年展設計的固定展覽場地,在Michele De Lucchi進行過翻修設計改進後使博物館不僅保持Muzio的設計,同時又為博物館建築賦予一種新身份。

六天在米蘭的調查之後,接著前往托斯卡尼大區,義大利紅酒的其中一個知名酒區:CHIANTI。在路途中會經過義大利北部接著海岸的大港-熱內亞,在熱內亞停留是為了參觀另一位知名義大利建築師Renzo Piano依山坡而建的事務所,並可以眺望地中海,並且可以透過事務所內建築師的導覽,一窺Piano所定義的當代義大利建築角色與地域關係的轉換。

抵達Chianti之後,往後六天就直接住宿在當地的其中一個酒莊Poggio Bonelli當中,成員們會再次進行設計上的討論,並開始思考研究葡萄作物、收成釀造窖藏、品酒與觀光機能空間的設計。在托斯卡尼大區我們會去參訪鄰近的歷史古城西恩納,觀察社群的形成與相關的都市紋理,另外我們會去兩個具有指標性的酒莊做為設計上的參考:從14世紀開始釀造的老牌酒莊Antinori家族委託Studio Archea事務所所興建的酒藏/以及Brolio家族古城堡11世紀開始釀造(該區最久)所屬領地的Barone Ricasoli酒莊。在兩個新舊之間的酒莊找出代表Chianti酒區的空間特質加以進行討論。

在托斯卡尼的最後一天我們就針對葡萄酒的理解與這樣的食物地景所想像出一個回應基地的設計做一次最後的設計評圖,這個學術成果也將蒐集回饋給未來繼續合作的幾個對象:包括位於義北的慢食大學University of Gastronomic Science,米蘭理工大學Politecnico di Milano,以及下一個葡萄酒研究基地:位於法國西南的世界葡萄酒文化中心波爾多Bordeaux。

Starting from the 2014 Venice Architecture Biennale, the Department of Architecture of Tunghai University and the School of Architecture and Urban Planning of Politecnico di Milano have collaborated every summer to develop a cultural understanding of food landscapes. Through understanding each other’s food culture, we can review our own understanding of the land and think about more possibilities for the development of architectural design. We call it the "East/West Dialogue" (East/West Dialogue).

In this [2017 Italian Food Landscape Work Camp: Winery Design], we focused more on discussing the land value reflected by a certain food itself, and chose "wine", which Taiwanese may be familiar with but not too familiar with, as the research object. Six days before the start of the work camp, we directly conducted research on wine life and consumption habits in Milan, the most densely populated and largest city in northern Italy. To conduct research, members participating in the work camp study will first be divided into groups. They need to collect as much as possible samples of consumption behavior and the presentation of wine lists and wine region terroir in the city. They will be integrated into a research report through photos/pictures/video clips of different media. During the study period in Milan, we will also arrange to visit two or three contemporary Milan exhibition halls: by Rem Koolhaas designed the renovated and newly built Prada Foundation from the old winery space/Hangar Bicocca Private Art Museum converted from a factory building in the northern suburbs of Milan/Milan Triennale Museum. The architect Giovanni Muzio designed a fixed exhibition venue for the then Milan Triennale in 1933. After renovation and design improvements by Michele De Lucchi, the museum not only maintained Muzio's design, but also gave the museum building a new identity.

After six days of research in Milan, we then headed to Tuscany, one of the famous wine regions for Italian red wine: CHIANTI. On the way, we will pass through Genoa, a large port in northern Italy that connects to the coast. We stopped in Genoa to visit another well-known Italian architect, Renzo Piano's office built on a hillside. You can overlook the Mediterranean Sea and, through the architect's guide in the office, you can get a glimpse of the transformation of the role of contemporary Italian architecture and regional relationships defined by Piano.

After arriving in Chianti, they will stay directly at one of the local wineries, Poggio Bonelli, for the next six days. The members will discuss the design again and begin to think about the design of grape crops, harvest brewing cellars, wine tasting and sightseeing functional spaces. In the Tuscany region, we will visit the nearby historical city of Sienna to observe the formation of communities and related urban textures. In addition, we will visit two iconic wineries as design references: the winery commissioned by Studio Archea from the Antinori family, a long-established winery that has been brewing since the 14th century/and the Barone Ricasoli winery, which is owned by the ancient castle of the Brolio family, which has been brewing since the 11th century (the oldest in the region). Find out the spatial characteristics that represent the Chianti wine region and discuss them in the two wineries between the old and the new.

On the last day in Tuscany, we made a final design review on the design of a base that responds to the understanding of wine and such a food landscape. This academic result will also be collected and fed back to several partners for continued cooperation in the future: including the Slow Food University of Gastronomic Science in Yibei, Politecnico di Milano, and the next wine research base: Bordeaux, the World Wine Culture Center in southwest France.
