(Course Contenets)

From earth to the table概念牽動對於飲食內涵、文化、食材、食物哩程的探討。 Feeding the Planet.

If there was a blank piece of drawing paper and we were asked to draw up a real and friendly pastoral shared home in our dreams, how would you start?

While some people were still laughing at the homework of elementary school students, Jacqueline Cramer and Glenn Herlihy, after a permaculture course, worked with thousands of volunteers to build Seattle’s pride: the world’s first public “Beacon Food Forest.” Who said it’s hard to find the shared beauty of countryside in the city?
Looking around the world, the successful cases of Japan promoting food education and the concept of From earth to the table in European and American countries have affected the discussion of the connotation, culture, ingredients and food journey of food. At the 2015 World Expo in Milan, Italy, "Feeding the Planet. Energy for Life" focused on people's rights to health, safety and adequate food. Canada's first Help Feed A Hungry Planet global youth agriculture summit, related to safe food and community engagement. Food, climate, environment, food safety and food agriculture education have become common issues in countries around the world. Participants in the discussion are no longer just experts and scholars, but how to integrate young people's creative activities and construct thinking to find solutions in the future.
Food farming is an issue of great concern to everyone after the recent deterioration of the environment. In order to satisfy consumers who want to buy good-looking ingredients with limited money, a large amount of pesticides and chemical fertilizers are used. This move has caused pesticide residues and pathological changes in consumers' bodies, as well as land pollution and habitat destruction of environmental species. When the fluttering butterflies no longer dance, the ambition to provide habitat for birds and animals becomes smaller, the land becomes a weeping lament, and the city becomes a link between gorgeousness and desolation. Should we have the courage to realize our ideals, so that the public can understand the relationship between agriculture and food consumption as soon as possible, and experience first-hand the important issues of realizing food and agriculture education.

When I was young, I bent down to observe every plant and tree, and the joy of imagining every inch was a common happy childhood memory. The fields are the closest to real beauty, the calmness and hope in nature, and are opportunities to experience life and emotion. Cultivating and experiencing the natural beauty of the countryside and appreciating the aesthetic creation of the group, transforming it into a concern for the people through poetic transformation, and extending it to the aesthetic appreciation and glory of the people in the community, is the ideal vision to regain the growth of life - the touch and value of beauty.
This course hopes to be integrated into practical courses, cooperate with the university's social responsibility plan and the participation of citizens, hoping to achieve the ideal state of "free farming and harvest sharing"; and then "enjoy the earth and give back to nature", push fallen leaves to fertilize, and circulate resources to conserve nature. The concept "turns to organic planting to nourish the land and implements environmental education; later "Joining the crowd for beauty and experiencing life", through art curation, creation of on-site materials, exhibitions in the fields, and pastoral art festivals, let smiling eyes see everything as beautiful scenery.

Vision and philosophy
1. Free farming and harvest sharing
When the area of cultivated land in cities shrinks, many nutritionally necessary vegetable materials are forced to be cultivated in the countryside or borders, resulting in high transportation costs for supply, and even relying on international trade imports. This not only causes the domestic farming population to gradually disappear, but also increases the cost of vegetable food. There are fragments of land in the city, waiting for plan changes or land enclosures, but cannot be effectively implemented, and the land underfoot is becoming increasingly desolate. The source of fresh vegetable food should not be controlled by money, and land should be participated through joint governance and sharing; community shared parks can be cultivated together, and through resource sharing, "free farming and harvest sharing" can truly break down community barriers and rediscover the precious value of true trust and sharing, which is also a core concept in the course.
2. Enjoy the earth and give back to nature
Being close to the edge of the development of Taichung High-tech Corridor, we should uphold the spirit of low-carbon life and adapt to nature, and not aim at mass production of agriculture. Use natural fallen leaves and dead branches to compost, and return the generated recyclable garbage resources to the earth, establish a recycling education mechanism, conserve the land that is close to people, and have the concept of endless energy and resource recycling. We will further implement school education, allowing children to experience every detail of life on the plate, extending it into the most direct natural life education, allowing children to directly enjoy healthy and organic fruits and vegetables, and deeply reflect on another beautiful scenery in urban life.
3. Enjoy the beauty of the crowd and feel life
Beauty is the basic condition for not lacking in life, and it is also the origin of creativity and life. One flower and one grass is creation. The basis of creation and imagination comes from life, and art cannot be separated from life. Standing on the pastoral land that is co-produced and shared, we can re-examine the relationship between people and groups in life, be able to enjoy the beauty of groups, and re-experience the endless energy and value of life.
