教育目標 Course Target

※課程目標 (Course Objective) 1.自來,大學教育以分科分系來規畫學習知識的方式,早為有識之士憂慮學習領域過於精深化,而規劃通識課程期能發揮修補效能。 2.而受全球化影響所及,對跨領域知識的追求熱忱與運用能力,更迅速成為人人必備要件。 3.共時授課,是高等教育界為因應上述趨勢所創設,教師首須以身作則相互學習,併引導學生透過實作有效進行跨領域學習。 4.問題意識養成: (A.)懷抱追求自由與平等的理想,從生活場域發掘阻礙理想的問題,藉著深層探索、詮釋、解決問題歷程,活用既有知識體系、繼續拓展知識廣度與深度,從而可望書寫成具有影響力的報導,朝改革社會的方向逐步邁進。 (B.)民以食為天。對飲食文化做觀察與思辯:(一)由充飢→色香味→物美價廉,是人們對飲食需求的發展,與台灣美食文化的形成簡要歷程。 (二)兼顧:色香味物美價廉的台灣普羅大眾餐飲價值觀,而所付出的代價是甚麼? ■ 課程內涵 (Course Contents) 1.飲食文化是生活的整體表現。經由對飲食的集體態度與習性做觀察、探索、省思、辯證,期以發掘問題,改善問題,讓生活更臻理想之境。 2.本課程在「共時授課」的架構之下,學生可以獲得報導書寫與飲食文化二個領域的學習資源。 3.交叉討論有助學習廣度:積極引導同學加入與:業師+餐旅系、文學系教師作對話,將可獲致的教學效果。 4.田野觀察與思辯:作深層結構的探索的過程,驗證既有知識體系。 5.將上述過程,練習書寫成報導故事,發揮影響力。※Course Objective  1. In the past, university education uses a sub-discipline to plan the way of learning knowledge. As early as, people of insight worry that the field of study is too deep, and the planning of the general course can play a patching effect. 2. Due to the influence of globalization, the pursuit of enthusiasm and application of cross-domain knowledge has become an essential requirement for everyone. 3. Time-honored teaching is created by the higher education sector in response to the above trends. Teachers are required to lead by example and guide students to conduct cross-disciplinary learning through practical implementation. 4. Problem awareness: (A.) Embracing the ideal of pursuing freedom and equality, exploring the problems that hinder the ideals from the field of life, and using deep knowledge, interpretation, and problem-solving processes, using existing knowledge systems, continuing to expand the breadth and depth of knowledge, and thus hope to write Influential reports and gradual progress towards the reforming society. (B.) People take food for the day. Observing and arguing about the food culture: (1) From the hunger to the scent, the color and the fragrance, and the high quality and low price, it is a brief history of the development of people's dietary needs and the formation of Taiwanese food culture. (2) Taking into consideration: What are the costs of Taiwan's popular and popular food and beverage values? ■ Course Contents (Course Contents) 1. Food culture is the overall performance of life. Through observation, exploration, reflection, and dialectic on the collective attitude and habits of diet, we will explore problems, improve problems, and make life more ideal. 2. Under the framework of “Total Time Teaching”, students can obtain learning resources in two areas of writing and food culture. 3. Cross-discussion can help the learning breadth: actively guide students to join the dialogue with the teachers, the food and beverage department, and the literature department teachers, which will achieve the teaching effect. 4. Field observation and speculation: As a process of exploration of deep structures, verify existing knowledge systems. 5. Write the above process, practice writing a story, and exert influence.

開拓觀察視野,是磨練報導能力的基石。而對飲食文化的觀察與報導,可以磨練出:對飲食料理者的工作與生活態度觀點
